Meaty Meatloaf

This is one of John’s Sunday Dinner specialties.

Meat Mixture

1½ lbs ground beef
⅔ C oats (or breadcrumbs)
1 C milk
1 tsp salt
¼ tsp poultry seasoning
⅛ tsp pepper
2 eggs
1 tsp Worcestershire
¾ C grated onion

Sauce

½ c katchup
2 tbs brown sugar
1 tsp mustard
¼ tsp nutmeg

Preheat oven to 375°F.

Dump the meat mixture ingredients into a bowl and stir until well mixed. Dump into ungreased ceramic loafpan. Indent center top lengthwise slightly with spoon, pour on sauce, but only in the indent (reserve some of the sauce for later, to serve warm so eaters can add it to their taste).

Bake for 45 minutes, then check for doneness: no red left but not too dry, either. It does not hurt to take out a slice to verify doneness – you can repair by dribbling some sauce on the repaired cut.

Yields: 6-8 servings

Time to make: about 1 hour
