Dutch Babies
This is a family favorite for breakfast in the Peterson home. Sometimes it is called a Danish Pancake; also, it is similar to German Pancake, though more light and fluffy.
6 eggs
1 C flour
1 C milk
1 tsp salt
¼ C butter
Place butter in a glass 9×13″ pan, and place pan in the oven while it preheats to 425°F.
Mix eggs, flour, milk, and salt in blender until smooth. When butter has melted, pour batter into the pan and return it to the oven. Bake for 17 minutes, or until edges are golden brown.

Jam, syrup, and other toppings are yummy on German Pancake, but the Hoffman family recommends powdered sugar with freshly squeezed lemon juice.
