Firework Pancakes

This is more of a method than a recipe, but it is a family tradition that Dad made up when all his girls were little, and it is one of our favorites for just about every holiday morning!

breakfast sausage links (Dad traditionally used “Little Sizzlers” but, sadly, they are no more)

Cook up sausage links and then slice them into little chunks (each one makes 4-6 pieces). Heat a large griddle over medium or so. For each pancake, arrange about 5 sausage bits in a little group, then pour pancake batter over them – this creates the firework pattern. Cook for a couple of minutes, until first side is golden brown, then flip and cook other side.
