Risa’s Favorite Tortilla Soup

1 large can chicken broth
1 lb chicken cut into bite sized pieces (in a pinch, you can also use canned chicken!)
1 bag frozen bean/corn mix (with Mexican seasonings from Pict Sweet)
1 bunch cilantro, chopped
2 green onions, chopped
1/2 tsp cumin
1/2 tsp taco seasoning
1/2 tsp minced garlic
juice of 1/2 a lime
tajin or lemon pepper

Dice chicken and sear chicken in a large pot with a little olive oil and tajin or lemon pepper. Add remaining ingredients and simmer all for 15 min. Serve with sour cream, cheese, and tortilla chips.

To make it a little more spicy, add more cumin and taco seasoning and lime juice, as well as a few good turns of black pepper and about 1 tsp of Tajin, if you can find it (it will be with the mexican seasonings). Also, if you like it a little thicker, just add about 2 Tbsp of flour after you sear the chicken but before you add everything else.

Time to make: ~30 minutes
