Party Potatoes

7-8 potatoes
1 c cheese
1/2 c butter
1 c sour cream
1 can cream of chicken soup
milk
salt & pepper
chopped scallions

Boil potatoes in skins until tender. Meanwhile, blend cheese, butter, sour cream, and soup and heat in microwave, stirring occasionally, until smooth. Add milk to reach consistency of thin gravy.

Pre-heat oven to 350 degrees F.

Peel and grate cooked potatoes, then gently stir cheese sauce in, along with salt, pepper, and scallions. Spray baking dish with non-stick spray, add potato mixture, and bake for about 25 minutes.

Time to make: ~1 hour
