Zucchini Casserole
6 c sliced zucchini
1/4 c grated onion
1 c cream of (your choice) soup
1 c sour cream
1 c grated carrots
1 pkg stuffing mix (I like Peppridge Farms)
1 Tbsp butter
Pre-heat oven to 350 degrees F.
Saute zucchini and onion in a little olive oil for 5 minutes. Combine with soup, sour cream, and carrots. Mix stuffing with melted butter and spread half on the bottom of pan. Add veggie layer, then spread remaining stuffing over the top. Bake for 25-30 minutes.
Time to make: ~45 minutes
