Almond Cookies
½ cups grated almonds
2/3 cup sugar
¾ cup chopped raisins
1 extra large egg
2 egg yolks
grated zest from 1 lemon
¼ tsp ground cloves
¼ tsp allspice
Preheat oven to 325 degrees F.
Grease a large cookie sheet and dust with flour. Combine ingredients in a medium bowl and mix well using a pastry blender. Knead until combined. Roll out dough to 3/8” pan (1 cm) thickness with floured rolling pin. Cut shapes and place on prepared sheet 1/2″ apart.
Bake in upper third of oven for about 15 minutes.
