Black Bean & Beef Chili with Sun-Dried Tomatoes

½ lb lean ground beef
1 large onion, diced
2 cloves garlic, minced
3 (15oz) cans black beans, drained
1 (28oz) can tomato puree
½ cup sun-dried tomatoes (in oil), chopped
1 cup salsa
2 tbsp chili powder
2 tsp oregano
1 tsp ground cumin
½ tsp ground black pepper

Preheat a deep skillet over medium-high heat. Brown beef until no longer pink (about 5 minutes); drain. Add onion and garlic and sate until soft (about 5 minutes). Add beans, tomato puree, sun dried tomatoes, salsa, chili powder, oregano, cumin, and pepper.

Bring to a boil, cover and lower heat; simmer gently for at least 20 minutes until thoroughly heated. Add hot sauce to desired heat preference. Serving suggestion: Top with shredded cheddar cheese and sour cream. Corn muffins or tortilla chips on side or crumbled on top.

Time to make: 30-45 minutes
