Kimberly Cookies
1 c Butter
1 c white sugar
1 c brown sugar
2 eggs
1 tsp vanilla
2 c flour
2 1/2 c instant oatmeal (measured from out of the box, then blended in a blender or processor until sand consistency – not measured after blended)
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
12 oz chocolate chips
1/4 c toffee chips (optional)
(Can also add nuts)
Blend oatmeal so it’s ready for later. Cream butter and sugars. Add vanilla and eggs. Beat until smooth. Add blended oatmeal, flour, b powder, b soda, and salt. Mix, then add chocolate chips and toffee chips.
Bake at 350°F for 8 (for tbsp sized cookies) min or up to 11-13 min (for large cookies made up of several tbsps), depending on size and how done you like your cookies.
