Ginger Cheesecakes
Crust
18-20 crushed gingersnaps
2 tbsp sugar
¼ cup melted butter
Filling
3 8oz pkg ream cheese softened
1 ½ cup sugar
2 tsp ginger
1 tsp lemon juice
½ cup whipped cream
1 tsp vanilla
1/8 tsp salt
4 eggs
Pre-heat oven to 350 degrees F. Mix crust ingredients together and press into bottom of pan. Bake for 10 minutes, then allow to cool. Leave oven on, as you will use it again.
Beat cream cheese until smooth. Gradually add sugar until smooth and fluffy. Beat in ginger, lemon, vanilla, and salt. Add eggs all at once. Beating on low, stir in whipping cream. Pour into pan. Place on shallow baking pan. Bake for 45-55 minutes. Loosen crust from side of pan, then cool 30 minutes more. Remove from pan and cool in fridge for 4 hours before serving.
