Broccoli & Cheese Stuffed Chicken Breasts

1 pkg chicken breasts
salt and pepper
1 tbsp butter
1 small onion (chopped)
1 pgk 10 oz broccoli
1 ½ cup shredded Swiss or cheddar
¼ tsp nutmeg
paprika

Preheat oven to 450 degrees F.

Between pieces of waxed paper, pound each breast to ¼” thick and season, then set aside. In medium skillet over medium heat, melt butter sauté onion and broccoli for 5 min. Remove from heat and stir in 1 cup cheese and nutmeg. Place equal amount of cheese and broccoli mixture in center of each breast. Fold in edge to cover stuffing. Place seam-side down on lightly greased baking pan. Sprinkle with remaining broccoli mixture, cheese, and paprika.
