Chicken & Tomatoes with Rice

1 lb chicken
1 Tbsp + 1 Tbsp soy sauce, divided
1 Tbsp water
1 Tbsp corn starch
1/2 c + 2 Tbsp oil, divided
1 c onion, rough chopped
1/4 tsp salt (optional)
1 tsp sugar
1/2 c chicken stock
2 medium tomatoes, peeled and cubed
cooked rice
sesame seeds (optional)

Cut uncooked chicken into one inch squares. In a large skillet, place 1 Tbsp soy sauce and ½ cup oil and turn heat to med-high. Sauté chicken until tender (approx 5 minutes). Add onion and fry a few seconds. Drain chicken and onion and set aside. Reheat pan and add 2 Tbsp of oil, 1 Tbsp soy sauce, salt, sugar, and chicken stock. Whisk together corn starch and water, and add to pan. Bring to a boil, and add chicken and onions, as well as tomatoes. Serve hot over rice. May garnish with sesame seeds.

Yield: 6 servings
