Mom’s Chicken Alfredo

Chicken

About 1 boneless chicken breast per person
1-2 Tbsp vegetable oil
pepper
garlic powder
poultry seasoning
nutmeg
Parmesan cheese

Sauce

½ c butter
1 Tbsp flour
¾ C milk or cream
¼ C Parmesan cheese
“tad” of garlic

Sauté sliced chicken breasts in a little oil. Season with pepper, garlic, poultry seasoning, nutmeg, and – after chicken has browned – Parmesan cheese.

In a saucepan over medium-low heat, blend butter and flour into a roux. Add milk/cream, cheese, and garlic, and cook until mixture starts to thicken, stirring often. Serve chicken and sauce with hot, cooked pasta.

Time to make: 30-40 minutes
