Pecan Pie Squares
Crust
3 cups flour
¾ cup butter, softened
¼ cup plus 2 tablespoons sugar
¾ teaspoon salt
Filling
4 eggs, beaten
1 ½ cups corn syrup
1 ½ teaspoon vanilla
1 ½ cups sugar
3 tablespoon butter, melted
2 ½ cups chopped pecans
Heat oven to 350°F. Grease a jelly roll pan (15 ½” x 10 ½” x 1”).
Beat crust ingredients together in a large bowl on medium speed until crumbly (mixture will be dry). Press firmly into pan. Bake until light golden brown, about 20 minutes. Prepare filling while crust in baking.
For filling, mix all ingredients except pecans until well blended. Stir in pecans. Pour filling over baked crust. Spread evenly. Bake until filling is set, about 25 minutes. Cool completely and cut into squares.
Yield: Lots!
