Cranberry Pudding

Cranberry Pudding

Pudding
2 c cranberries, rinsed & dried
1 1/3 c flour
2 tsp baking soda
¼ c molasses
½ c corn syrup
⅓ c boiling water

Sauce
1 cube (½ c) butter
1 c cream
1 c sugar

Combine flour and baking soda, then toss cranberries into flour mixture. Combine water, molasses and corn syrup then pour over cranberries. Gently mix. Pour into a microwave safe casserole dish and microwave until set (usually 15-20 min, depending on microwave). While pudding cooks, melt butter over med-low heat then add cream and sugar. Stir occasionally until sugar is dissolved.

Serve pudding, pour sauce over the top and enjoy warm!

Notes: Sauce can also be made in the microwave, but be careful! It can boil over without warning, and is like sweet napalm!
