Chicken Casserole
Casserole
2-4 lb diced cooked chicken
1 c cooked rice
3 c chicken broth
4 eggs, beaten
1-2 pieces of bread, broken in to pieces
1 tsp salt
Sauce
1/4 c butter
1/4 c flour
2 c broth
parsley to taste
paprika to taste
salt & pepper to taste
Pre-heat oven to 350°F. Mix chicken with all other casserole ingredients in a large casserole or 9×13″ pan. Bake for 50-60 minutes, uncovered.
While casserole bakes, melt butter in a saucepan over low heat, then whisk in flour. Stir in broth and seasonings. Simmer over medium heat, stirring occasionally, 5-10 minutes (or until sauce thickens). Leave over lowest heat until ready to transfer to a small pitcher or gravy boat and serve, pouring sauce over each serving of casserole.
Yield: 8-10 servings
