Creamy White Chili
This recipe was given to Emily by a friend (and previous boss), Debbie Berg, with the highest recommendation that this is the BEST white chili recipe to be found!
1 lb. chicken breast (cubed)
2 15.5 oz cans Great Northern Beans
1 medium onion, chopped
1 1/2 teaspoon garlic powder
1 tablespoon vegetable oil
1 14.5 oz can chicken broth
8 oz. canned chopped green chiles
1 teaspoon salt
1 teaspoon cumin
1 teaspoon oregano
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
1 cup sour cream
1/2 cup heavy cream
Sauté chicken, chopped onion and garlic powder in oil. Add beans, broth, chiles, and seasoning. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Add sour cream and heavy cream, heat until hot (do not allow to boil).
Time to make: ~60 minutes
