Gnocchi
1 c water
1 Tbsp oil
1 tsp salt
1 pkg (4 servings) instant mashed potatoes
2 egg yolks, slightly beaten
~2/3 c flour
Boil water, oil, and salt. Add instant potatoes and cool slightly. Add egg yolks and enough flour to make a stiff dough.
Put a large pot of salted water on the stove to bring to a boil. While it heats, form the dough into small, oblong gnocchis, about the shape of large grapes, just a little bigger. Cook gnocchi in small batches in boiling water for about five minutes, or until they float.
Need a topping? Once gnocchi are drained, try add them to Emily’s Creamy Butter Sage Sauce!
