{"id":1106,"date":"2009-10-12T04:32:22","date_gmt":"2009-10-12T04:32:22","guid":{"rendered":"http:\/\/groo.wordpress.com\/?p=1106"},"modified":"2009-10-12T04:32:22","modified_gmt":"2009-10-12T04:32:22","slug":"cold-raspberry-souffle","status":"publish","type":"post","link":"https:\/\/groo.4ever.family\/recipes\/2009\/10\/12\/cold-raspberry-souffle\/","title":{"rendered":"Cold Raspberry Souffl\u00e9"},"content":{"rendered":"<p><!--more-->2 envelopes (2 tsp each) unflavored gelatin<br \/>\n1\/3 c orange juice<br \/>\n1\/3 c lemon juice<br \/>\n4 c raspberries,<br \/>\n6 large egg whites (to sterilize eggs before cracking, immerse briefly in boiling water)<br \/>\n1 cup sugar<br \/>\n1 \u00bd cups whipping cream whipped to hold soft peaks<\/p>\n<p>In a 1-2 quart pan, mix gelatin with juices, then let stand until liquid is absorbed. Stir on medium heat until melted. Puree raspberries in blender, then add gelatin mixture. Rub puree through a fine strainer into a bowl; discard seeds. Chill, stirring often, just until mixture barely thickens (10-15 minutes).<\/p>\n<p>With a mixer on high speed, whip egg whites until foamy. Slowly add sugar, beating until soft peaks form.  Fold whites and whipping cream into puree. Form a 3 inch wide foil collar on the rim of a 5-6 cup souffl\u00e9 dish. Pour in mixture. Cover and chill until firm (~3 hours or until next day).
