{"id":1217,"date":"2009-10-16T04:28:43","date_gmt":"2009-10-16T04:28:43","guid":{"rendered":"http:\/\/groo.wordpress.com\/?p=1217"},"modified":"2009-10-16T04:28:43","modified_gmt":"2009-10-16T04:28:43","slug":"herbed-quinona","status":"publish","type":"post","link":"https:\/\/groo.4ever.family\/recipes\/2009\/10\/16\/herbed-quinona\/","title":{"rendered":"Herbed Quinona"},"content":{"rendered":"<p><!--more-->1 c quinoa, rinsed and drained<br \/>\n1 \u00bd c chicken stock (skimmed of fat) or vegetable stock<br \/>\n1 large bunch flat-leaf parsley (about 4 oz)<br \/>\n1 bunch chives, snipped into \u00bc inch lengths (about \u00bc oz)<br \/>\n1 tbsp unsalted butter<br \/>\nsalt and freshly ground pepper to taste<\/p>\n<p>In a medium saucepan, combine quinoa and stock; bring to a boil. Cover and reduce heat to low. Simmer until all liquid is absorbed and the grains are translucent, about 12 minutes. Remove from heat.<\/p>\n<p>Meanwhile, pick \u00bd cup of the parsley leaves from the stems, chop the leaves coarsely and set aside. Place remaining parsley leaves, pureed. Transfer puree to a double layer of cheesecloth laid over a small bowl. Squeeze all liquid from the puree, discard solids, and set parsley juice aside.<\/p>\n<p>Add the snipped chives, butter, and reserved parsley juice and chopped parsley into cooked quinoa and mix until combined.
