{"id":1948,"date":"2011-07-26T03:02:51","date_gmt":"2011-07-26T03:02:51","guid":{"rendered":"http:\/\/groo.wordpress.com\/?p=1948"},"modified":"2011-07-26T03:02:51","modified_gmt":"2011-07-26T03:02:51","slug":"garlic-citrus-chicken-fajitas","status":"publish","type":"post","link":"https:\/\/groo.4ever.family\/recipes\/2011\/07\/26\/garlic-citrus-chicken-fajitas\/","title":{"rendered":"Garlic Citrus Chicken Fajitas"},"content":{"rendered":"<p><!--more-->1\/4 cup lime juice<br \/>\n1\/4 cup orange juice<br \/>\n2 Tbsp olive oil<br \/>\n1\/2 tsp salt<br \/>\n1 tsp minced garlic<br \/>\n1 tsp minced onion<br \/>\n3\/4 tsp ground cumin<br \/>\n3\/4 tsp oregano<br \/>\n1\/2 tsp chopped cilantro<br \/>\n1\/2 tsp ground black pepper<br \/>\n1 1\/2 lb boneless skinless chicken breasts<br \/>\n1 red or orange bell pepper<br \/>\n1 medium white or sweet onion<br \/>\n1\/3 cup frozen kernel sweet corn<br \/>\nflour tortillas<\/p>\n<p>Mix juices, oil, and spices in a gallon-size zip-top bag.  Slice chicken into thin strips and add to marinade in bag, mixing well to coat evenly.  Refrigerate at least 30 minutes.<\/p>\n<p>Meanwhile,  slice bell pepper and onion into strips, warm tortillas, and pre-heat a large skillet over high heat.  Drain chicken (reserving marinade), then cook fast (about 3 minutes) in hot skillet, stirring often.  Remove chicken and keep warm.  Add veggies to skillet and saute a few minutes, then add to chicken.  Pour reserved marinade into skillet and bring to a boil.
