{"id":251,"date":"2009-09-04T18:51:49","date_gmt":"2009-09-04T18:51:49","guid":{"rendered":"http:\/\/groo.wordpress.com\/?p=251"},"modified":"2009-09-04T18:51:49","modified_gmt":"2009-09-04T18:51:49","slug":"almost-cafe-rio-lime-rice","status":"publish","type":"post","link":"https:\/\/groo.4ever.family\/recipes\/2009\/09\/04\/almost-cafe-rio-lime-rice\/","title":{"rendered":"Almost Cafe Rio Lime Rice"},"content":{"rendered":"<p><!--more-->4 oz can green chilies, drained &amp; chopped<br \/>\n1\/2 onion, chopped<br \/>\n3 cups chicken or vegetable broth<br \/>\n1 cup water<br \/>\n4 tsp garlic, minced<br \/>\n3\/4 tsp salt<br \/>\n1 Tbsp butter<br \/>\n2 cups rice<br \/>\nzest &amp; juice of 3 limes<br \/>\n1\/2 bunch cilantro, chopped (~4 Tbsp)<\/p>\n<p>Blend green chilies and onion in food processor.  Bring broth to a boil (or place in rice cooker) and add all ingredients except water, limes &amp; cilantro.  Simmer, covered, for 20 minutes (or prepare according to rice cooker directions).  Blend water, juice, zest, &amp; cilantro in food processor, and stir into rice.  Cover and cook for another 5-10 minutes, or until water is taken up and rice is cooked through.
