{"id":64,"date":"2009-09-01T23:15:51","date_gmt":"2009-09-01T23:15:51","guid":{"rendered":"http:\/\/groo.wordpress.com\/?p=64"},"modified":"2009-09-01T23:15:51","modified_gmt":"2009-09-01T23:15:51","slug":"chewey-gingersnap-cookies","status":"publish","type":"post","link":"https:\/\/groo.4ever.family\/recipes\/2009\/09\/01\/chewey-gingersnap-cookies\/","title":{"rendered":"Chewey Gingersnap Cookies"},"content":{"rendered":"<p><!--more-->2 \u00bd c flour<br \/>\n\u00bd tsp baking soda<br \/>\n\u00bc tsp salt<br \/>\n2 tsp ground or fresh grated ginger<br \/>\n1 tsp diced crystallized ginger<br \/>\n\u00bd tsp allspice<br \/>\n\u00bd tsp ground black pepper<br \/>\n1 \u00bc c dark brown sugar, firmly packed<br \/>\n\u00be c salted butter, softened but not melted<br \/>\n1 large egg<br \/>\n\u00bc c molasses<\/p>\n<p>Combine flour, soda, salt, gingers (unless using fresh \u2013 in that case, add fresh ginger to wet ingredients), allspice, and pepper.  Mix well with a wire whisk, then set aside.  Cream sugar and butter with electric mixer at medium speed.  Scrape down sides of bowl, add egg and molasses and beat at medium speed until light and fluffy.<\/p>\n<p>Add flour mixture and mix at low speed just until combined \u2013 DO NOT overmix.  Chill the dough in the fridge at least 1 hour (which will make it easier to handle and harden up the butter so the cookies don\u2019t go flat).  Preheat oven to ???\u00b0F.  Form dough into 1\u201d balls and place on parchment- or silicone-lined cookie sheet about 1 \u00bd\u201d apart.  Bake for 22-25 minutes.
