Zamba Chicken (Parmesan Crusted Chicken)

Another DeBirk staple that could not be easier!  Alex named this yummy chicken from the Best Foods website because he said “Zamba” is what his taste buds do when he eats it. The website calls it Parmesan crusted chicken, but we like Zamba better!

Ingredients:

  • 1/2 C mayo
  • 1/4 C Parmesan
  • 4 boneless, skinless chicken breasts
  • 4 tsp Italian seasoned breadcrumbs
  • freshly ground black pepper

Directions:

Preheat oven to 425 degrees. Cover a baking sheet with tinfoil and place chicken on it, grind black pepper onto chicken. Combine mayo and cheese and divide evenly onto chicken. Sprinkle breadcrumbs over chicken. Bake for 20 minutes.

*for a slightly different flavor, add 1 tsp of pesto or ranch to the mayo/parm mix.

  • This is my favorite DeBirk-discovered recipe! Important note: the only time this recipe didn’t work beautifully for me I made the mistake of baking the chicken in a glass dish instead of on a baking sheet. There was a huge difference in cooking time and the topping started to burn before the chicken was done. 🙁 Lesson learned.
