John’s Pumpkin Chocolate Chip Cookies
1 box spice cake mix
29 oz can pumpkin
about 1 C semi-sweet chocolate chips
2 eggs
Preheat oven to 400°F.
Stir cake mix, eggs, and pumpkin about 20-25 strokes, not overly mixed – Lumps are good. Fold in chocolate chips.
Drop batter on ungreased cookie sheet with plenty of room between cookies. These will stay rather firm and tall, will not spread much. Bake for about 16 minutes, or until center is cooked through. Don’t let them sit on sheet once they come out of the oven, or the bottom of the cookies will be burned. Remove them immediately to a cooling rack.
