Grandma Wanda’s Boiled Raisin Cake

2 C Sugar
2 C Water
1/2 C Lard or Shortening
2 C Raisins (or small pkg)
1/2 C Walnuts
1? tsp each Nutmeg, Cinnamon, Allspice
1/2 tsp cloves
Mix ingredients in saucepan and bring to a boil. Take off stove and let cool.
Add 4 C flour, scant tsp salt, 1 tsp baking powder, 1 tsp soda (dissolve soda in a little hot water). .
Mix all well together.
Bake in a greased, floured pan for 1 hour. Mod oven 350℉.
Candied fruit may be added if you wish to make a more festive cake.
May be either plain or frosted with icing. I use a 6 qt. pan to boil ingredients in so it
will be large enough to stir other ingredients in easily. .
I usually bake ours in loaves and slice like fruit cake.
Use the amount of raisins you have or like in it- more or less than 2 C.
